Quick And Easy Chicken Fajitas

Christmas is over and the WHOLE house is a mess.  The last thing on my mind last night was cooking a huge meal.  We had snacked all day on the various cookies, breads and candy that family had brought to us on Christmas.  Quick, easy, and healthy meals are important right now for this busy mom!

  As I scanned the freezer and pantry chicken fajitas sounded good…and quick. This tried and true recipe is fast and my family loves it.

Ingredients:

1 bag of chicken fajitas (pre-cooked)
1 jar of salsa
sour cream (optional)
1 bag of whole wheat fajitas
1 red or yellow pepper


Directions:

1.  Heat frying pan on med. heat.   There is no need to add oil or pam to make cleaning easy.  Ozeri 8″ pan cooks great and cleans better!
No more scrubbing or soaking.  When the food is ready I wash out the skillet, dry and put away.  It really used to be a two day process because of the food stuck to my old skillets. 

2.  Cook the peppers first, for about 8 min.  I chop them as they cook. 

3.Cook the chicken next,  for about 8-10 min.  It doesn’t need to be seasoned or anything because it already has been pre-cooked.

 
 

4.  Prepare the tortillas with salsa and sour cream if you like. 

5. Dinner is ready.

Quick dinner recipes like chicken fajitas are great because in a short amount of time they cover most of the important food groups and prove to be a healthy meal for the family.
