Sweet And Sour Chicken

Sweet and Sour Chicken

My family loves chicken. I love easy recipes that will work with our budget. That is why Sweet and Sour Chicken is a favorite at our house. It can be served with rice, carrots and French bread. This meal will make enough to have leftovers the next day, if it lasts

 that long!


Prep time is 30 min. Cook time is 27 min. So in about an hour you can have a healthy, tasty meal that everyone will enjoy!

Ingredients:


½ lb. boneless, skinless chicken breast

¼ c. apple cider vinegar

1 small can of pineapple chunks or half of a large pineapple

2 ½ T. pineapple juice (from the canned pineapple)

Small onion cut into chunks

½ green bell pepper cut into chunks

8 oz. tomato sauce

½ tsp. salt

1/3 c. sugar

1 T. cornstarch

1/8 c. water

 
 

Directions:


Step 1:

Cut chicken into bite-sized pieces. Place chicken and pineapple juice in a large skillet and bring to a boil. Cook on medium heat for 15 min., covered.

Step 2:

Add vinegar, tomato sauce, sugar, salt, onion, and green peppers. Simmer for 10 min. on med.-low, covered.

Step 3:

In a cup, stir together water and cornstarch. Add to skillet and bring to a boil. Stir constantly.


Step 4:

Cook 2 min. and serve over rice.
