Quick Soup Recipe For Busy Moms

Busy Homeschool Mom Quick Soup Recipe is what I use when time is short. It is a breezy cold March day where we live, and that usually means we are having something warm for dinner. This quick soup recipe is perfect for busy homeschool moms. It will have their family begging for more!

 

Quick soup recipes are great for throwing in the crockpot and forgetting….at least until dinner comes around. My two favorite crockpot soup recipe’s are:chili and chicken noodle soup.

This quick soup recipe is great because it comes on the back of the box of chicken stock, and since I use the chicken stock in my soup the recipe is always there to use.

Now for the veggies, I use carrots and celery, but more carrots. My kids are not big fans of celery but if there is a little bit floating around they will not toss it out. Also, I leave out onions because no one in our family like onions. The only time I add onions is when someone is sick. Onions have a healing ingredient for colds.

Step one is too cook the chicken then cut it up. I do it this way because it makes cutting more easy. Then I throw that in the crockpot on 10 hours. So this one recipe I will start early because we eat around 5:30 or 6:00 pm. This will go on my to do list that I make out each day. If it doesn’t we would be eating soup from a can.

 

Step two is to add in the chicken stock, carrots, celery, onions (if you like them) and seasonings. The only two seasonings that I add in are salt and pepper because of the taste.
The I stir a few times and let everything get mixed.

Step 3 wait until 90 minutes before dinner is ready and add the noodles. If not they will be too soggy and soak up most of the chicken stock. At this point I will also add in 2 cups of water. This will help break up too much flavor from the chicken stock and add a little more soup for seconds.

Step four call everyone in for dinner and serve with crackers. They will love this recipe!

 

Quick Soup Recipe for Chicken Noodle Soup

4 c. chicken broth

1 dash of black pepper

1 med. carrot sliced

1 stalk of celery, sliced

1/c uncooked egg noodles

1 c. shredded cooked chicken or turkey

  1. Heat broth, black pepper, carrot and celery in crockpot or saucepan. Crockpot 3 hours. Saucepan med. heat until it boils.

This is a simple recipe that can be made anytime of the year.
